2. Cherry-Pineapple Golden Cake

Prepare the base with all purpose flour, salt, granulated sugar, eggs, vegetable oil, baking powder, baking soda, buttermilk, and Dutch-processed cocoa powder, strongly brewed coffee and vanilla essence.
For the mocha buttercream that is on the spotlight of the show will be a blend of egg whites (make sure there’s not even any trace of egg yolk mixed with the egg white), granulated sugar, instant espresso coffee powder, unsalted butter (better at room temperature), vanilla essence with chopped and melted dark chocolate.
The ganache will need dark chocolate, little coffee powder, and heavy whipping cream.
Please note; the buttercream will get curdled but you need to constantly mix it up at high speed till it achieves that perfect creamy texture.
